Mum and Omi immigrated to Canada from Austria when Mum was 3, and they brought their food traditions with them. Roasting whole pigs was the centerpiece for family celebrations, chopped liver was an after school snack, steak tartare was a quick bite before Sunday dinner and sweetbreads were the food for birthdays.
Thinking of these meals makes my mouth water to this day, and in order to make sure that these foods stay a part of my life I've decided to start this project. It seems precariously easy to slip into a cycle where the choices are only chop, steak or breast. The working plan is to explore new cuts of meat and offal, as well as explore nose to tail eating and try to integrate it into everyday life--something that my Omi embraced before there were even words to describe it.
